Abstract |
This work aims to study the effect of feeding lactating goats on rations supplemented with some medicinal plants on the properties of Haloumi cheese. Thirty five of Zaraibi lactating goats were divided into five groups and group one was kept as a control fed on the basal ration. Ginger (Zingiber officinale L), turmeric" Curcuma Ionga L ", Marjoram "Marjoram hortensis", and Nigella "Nigella sativa" were added separately at the ratio of 100 mg/kg body was added to the basal ration of groups 2, 3, 4 and 5, respectively. HalIoumi cheese was made from the bulked milk of each group. The cheese yield was determined and fresh and stored cheese samples were analysed for chemical composition and sensory properties. Feeding on ration supplemented with curcuma or marjoram significantly (p<0.05) increased cheese yield and TS, fat and total protein contents of milk as well as TS content of cheese.
