English : Utilization of permeate to make probiotic mango - permeate beverage

Abstract Permeate was used to make fermented probiotic mango- permeate beverage. Permeate (73 - 81%), mango pulp (10 - 20 %), sugar (7-9%) and CMC (0.2 - 0.4%) were used to prepare the samples of, beverage. Whole mixtures were filtered, homogenized then heated at 95ºC/5 min, immediately cooled to 40°C, inoculated with (3 or 4%) of ABT culture the obtained treatments were bottled, incubated at 37±2 C for 6 hrs and stored under refrigerated conditions (6±2°C). pH values were determined during incubation period. Meanwhile, titratable acidity, counts of lactic acid bacteria, coliform group, spore forming, Staphylococci, Salmonella and molds & yeast were determined during cold storage as well as organoleptic properties. During incubation period, addition of 20% mango pulp decreased pH-values more than other treatments, pH-values decreased moderately with increasing size of inoculum from 3% to 4% throughout incubation process in all treatments. Also. L. acidophilus showed the fastest growth followed by Bif bifidium then St. thermophilus in all treatments along incubation period, Throughout storage period, there is a direct relationship between acidity and the percentage of mango pulp, L. acidophilus survived more than Bif bifidium in all treatments. Counts of therapeutic bacteria were in desirable levels. molds and yeasts started appearing after 5 days of cold storage, Staphylococci, Salmonella and Coliform group were not detected. Statistically, the treatments containing 20% mango pulp with 3 or 4% starter and that containing 15% mango pulp with 3 or 4% gained the highest significant score in organoleptic properties along storage period.
