English : Impact of trans glutaminase and different commercial starter cultures on pro biotic Kareish cheese quality

Abstract Impact of using transglutaminase (TGase), thermophilic (YC-380 and YF-L811) and mesophilic (MA016) starter cultures in making probiotic Kareish cheese (K) by means of using ABT-2 starter culture was studied. The use of increased amounts of TGase (0.0, 0.2 and 0.4%) increased the yield of fresh cheese, whereas the use of exopolysaccharides (EPS) producing culture (YF) gave the highest yield values of 29.4, 30.2 and 30.20% in case of using 0.0, 0.2 and 0.4% TGase, respectively. TGase had insignificant effect (P>0.05) on the moisture. content of K which showed higher corresponding values when made from YF-treatments. Treatment of cheese milk with 0.2% TGase increased acidity of K made from YC and YF treatments, while the use of EPS producing culture (YF) decreased the acidity content and increased pH. Counts of bifidobacteria and Lb. acidophilus were not significantly affected, in general, by using TGase, but viability of them was greatly enhanced when K was made frQIIl EPS producing culture (YF treatment). Most of the texture attributes were significantly affected by the applied treatments. Hardness, adhesiveness, springiness, gumminess and chewiness were increased especially when TGase was used at 0.4%. The use of YF gave lower values, in general, for the prementioned attributes. This decrease was significant in most samples. Concerning the organoleptic evaluation, the use of TGase insignificant impact on the sensory properties of K, which greatly improved by using the EPS producing starter culture, but overall acceptability was less for the all stored cheese when comp to the fresh samples.
