English : THE EFFECT OF SUSPENDED PARTICLES IN WORK ENVIRONMENT DURING PROCESSING ON CONTAMINATION OF DRIED BASIL

Abstract Work environment is considered to be very important for food safety implementation; suspended particles are significant factor for quality of work environment. Suspended particles were detected in two final preparation areas for dried basil, the first one was equipped by the system of dust suction and the second wasn't equipped and studied their impact on the final content of the product concerning the total ash and microbial load. Suspended particles recorded 6 mg/m3 and 24 mg/m3, in first and second areas respectively. High contamination of suspended particles due to increase dust contamination to increase in total ash. Total ash contents were 13.1% and 15.8% in the first and second area respectively. The suction dust system was affected negatively on total bacterial count, yeast and mold count. Accordingly, the total bacterial count, yeast and mold count were found about 1.96 * 106 and 23.60 * 103 cell/g. retrospectively in equipped area. On the other hand were found 6.16 * 106 and 36.41 * 103 cell/g. retrospectively in unequipped area.
