Abstract Ginger, the Rizome of Zingiber Officinalis, one of most widely used species of ginger family is common used for various foods and beverages. It is known to posses’ potent antioxidant, anti-inflammatory properties, anti-platelets, hypotensive and hypolipidemic effect. Also, ginger contains a number of co-active constituents, which might be potentially useful in the treatment of various diseases. The study were carried out on dry raw rizomes ginger, water extract, essential oil of ginger and Zacor as a drug were added in diets of albino male rats for 6weeks . The biochemical and histological experimentation were investigated to show the health effects of ginger. The chemical components of ginger essential oil and water extract were fractionated and identified to show the concentration of phenoleic compounds which have antioxidant and healthy effect. The result showed that the ginger slightly effect on body weight. The Rizome, essential oil and water extracted of ginger can improve the physical activities and vital characters of body organs. Some of these effects are decreasing cholesterol, total lipid and triglycerides, improving glutathione, phospholipids, and lipase enzyme of the body. The biochemical analysis of liver function (Total protein, Albumin, ALT, AST) and kidney function (Uric acid, Urea, Creatinine) were slightly affected. The examination of heart, liver and kidney tissues of rats showed no histopathological changes on tissues of rats which were fed on rizomes ginger, water extract, and essential oil of ginger .It can be concluded that rizomes ginger, water extract, essential oil of ginger had protective and healthy effect, because, it had natural antioxidant which decrease the hypercholesterolemic effect and heart diseases when used in foods and beverages.
