EVALUATION OF MICROBIAL AND HEAVY METALS RESIDUES OF SOME RAW MILK AND DAIRY PRODUCTS

Abstract |
A total of fifty random samples of some raw milk and dairy products represented by 30 samples of raw milk. These samples including buffalo, cow’s farm and bulk tank milk, 10 of each, 10 samples of kareish cheese and 10 samples of yoghurt. These samples were collected from different markets in Mansoura city, Dakahlia Governorate,Egypt during summer and winter of 2006&2007. All samples were used for microbiological examination, and some of them were used for the determination of some heavy metals. Obtained results represented the mean values of microbiological examination of raw milk and dairy products on either general or specific cultivation media. Results of the microbiological quality exhibited high microbial load of the raw milk and dairy products samples appeared on the tryptone glucose extract agar (TGEA) as a general medium either in summer or in winter season. The low values were observed on trypticase soy agar(TSA), salmonella shigella agar (SSA) ,potato dextrose agar (PDA) in bulk tank milk, buffalo milk, cow’s milk, kareish cheese and yoghurt samples, respectively. High significance was found between five samples on the level of different cultivation media, summer and winter seasons. High significant difference was also found in case of the interaction between the samples, media and seasons. Obtained results indicated that the high levels of Cu and Pb were found in bulk tank milk of summer samples being 30.10 and 7.76µg/g, respectively. The high level of Cd was 0.52 µg/g in bulk tank milk samples. On the other hand, the low levels of Cu, Pb and Cd were 16.07, 6.02 and 0.32 in buffalo milk, cow milk and bulk tank milk of summer samples,respectively.
