Abstract The chemical composition of wheat and corn grains and its effect on physical and mechanical properties were studied .To obtain wheat flour 82% , the wheat wholemeal flour passed through six sieves and accumulated under sieves 355,200,160 and <160 milli -micron for diameter. Concerning corn flour 97% being accumulated under sieves 450,400,355,200,160, and <160 mm diameter. The chemical composition of wheat grains flour was lower than the corn flour concerning ash, fibers and fats contents. While, being higher in protein and carbohydrates. The chemical composition was higher in wheat and corn grains compared to wheat flour 82% and corn flour 97%. The increment in chemical composition (ash ,fibers and fats ) of corn grains compared with wheat grain led to the increase of bulk density, absorbed water, terminal velocity and hardness.
