Abstract |
Background: Diabetes is a growing problem throughout the world .People with diabetes need to know how different foods affected their body and the illness. Doctors need scientific evidence to figure out what to tell patients about diets, especially about carbohydrates, fat and fiber. Medical nutrition therapy (MNT) is important in preventing diabetes, managing existing diabetes, and preventing or at least slowing the rate of development of diabetes complications (i.e., high-cho1esterol,coronary heart disease, chronic kidney disease ,cardiovascular disease ,and obesity and overweight). The aims: (1) evaluate the potential for preparation of a novel low-calorie flavoured frozen yoghurt containing oats or barley,( as a source of dietary fiber), low-carbohydrate (low-sucrose and 1ow-fructose),low-fat, and containing fat mimetic (e.g., whey protein concentrate, WPC) to improve body/texture, mouth feel and flavour perception resemble that of full-fat product; and (2) assess calories of the product macronutrients relative to the recommended daily intake (RDI) to be used as medical nutrition therapy (MNT), for individuals with diabetes, obesity ,overweight and related complications. Methods: a novel low-calorie flavoured frozen yoghurts were prepared, having low-carbohydrate especially low-sucrose and low-fructose and; low-fat; fortified with different levels of oats or barley (1-3%) as a source of dietary fiber. Physico-chemical properties and sensory evaluation were determined. Calories supplied by product macronutrient relative to the recommended daily intake, to be used as medical nutrition therapy (MNT),were assessed. Results: a 100 grams of low -calorie flavoured frozen yoghurts ,containing 2% or 3% oats or barley furnish 140.48-143.92 kca1; 2 grams fat; 9.94-11.3 grams protein; 19.64-20.99 grams carbohydrate (includes 5.5 grams sucrose and fructose for each); 0.81-1.95 grams dietary fiber; 0.41-0.75 grams soluble fiber (beta-g1ucan); 1.09-1.16 grams minerals (ash);and 63.5-64.5 grams water. Conclusion: It could be successfully produce a novel low-calorie flavoured frozen yoghurt, containing 2% or 3% oats or barley,(as a source of dietary fiber);low carbohydrate (especially low-sucrose and low-fructose); low-fat; and containing fat mimetic (e.g.,whey protein concentrate, WPC) to improve body/texture,mouthfee1 and flavour perception resemble that of full-fat product. The assessment of calories of product macronutrients relative to the recommended daily intake (RDI) , for individuals with diabetes, overweight or obesity and related complications, show that these products can be used as a medical nutrition therapy (MNT) in any partial meal replacement (PMR) p1an. Recommendation: A trail to explore the effect of our products on experimental animals with diabetes and related complications, or in a large number of patients is necessary to prove this study.
