English : Effect of feeding some medicinal plants on the properties of goat's milk cream
Abstract The effect of adding chamomile, thyme, fennel and peppennint (1g/kg body weight) in the ration of lactating goats on the properties of goat's milk cream was studied during cooled storage for 45 days. The titratable acidity, fat, acid value, free fatty acids (FFA) peroxide (PV) and thiobarbituric acid (TBA). values increased significantly, while pH and iodine values (IV) decreased significantly in cream from different treatments during storage. The development of acidity and FFA was significantly higher in cream obtained from goats fed on thyme, whereas feeding on peppermint retarded slightly the development of PV and TBA values. Feeding on medicina1 plants changed slightly the fatty acids pattern of fresh cream. Key words: Goat's milk, cream, fatty acids, medicinal plants.
