Abstract |
Five single strains and in combinations with different mixing ratios with Streptococcus thermophilus were examined for evaluating the best combinations which produce active starter which possesses good chemical properties and high bacterial number. These strains were L. acidophilus, L. helveticus, Str. thermophilus, Lactobacillus delbrueckii subsp. bulgaricus and Bifidobacterium bifidum. Resulted single and combinations starters examined for chemical properties (pH, acidity) and microbiological properties (turbidity, viable numbers). Results indicated that all strains exhibited good chemical and microbiological properties when they were in combination but this enhancement differed due to ratio mixing, in addition the combination consists of streptococcus thermophilus + lactobacillus acidophilus (1:2), streptococcus thermophilus+ lactobacillus helveticus (1:1), streptococcus thermophilus + Lactobacillus delbrueckii subsp. bulgaricus (1:2) and streptococcus thermophilus + bifidobacterium bifidium (2:1) were the best combinations which could act as starters for functional dairy products.
