English : Isolation and characterization of Laban Zeer microflora from different areas in Egypt

Abstract This study was carried out to determine the microbial flora of laban zeer (an indigenous fermented milk in Egypt). Twenty four samples of Laban Zeer were randomly collected from 6 Locations in Menia Governorate. Proximate analyses and microbiological flora were determined. The dominant lactic acid bacterial strains were isolated and characterized. (REP)-PCR typing of the isolates identified 11 strains were identified as Lactobacillus rhamnosus, 5 strains were Lactobacillus plantarum, 5 strains were Lactobacillus acidophilus , 3 strains were Lactobacillus casei and one strain was Lactobacillus helveticus . The isolation and characterization of the strains would allow a specific starter culture to be produced, which would further allow manufacture of laban zeer at a pilot plant scale to produce clean and hygienic product.
