Isolation and characterization of Laban Zeer microflora from different areas in Egypt

Abstract |
This study was carried out to determine the microbial flora of laban zeer (an indigenous fermented milk in Egypt). Twenty four samples of Laban Zeer were randomly collected from 6 Locations in Menia Governorate. Proximate analyses and microbiological flora were determined. The dominant lactic acid bacterial strains were isolated and characterized. (REP)-PCR typing of the isolates identified 11 strains were identified as Lactobacillus rhamnosus, 5 strains were Lactobacillus plantarum, 5 strains were Lactobacillus acidophilus , 3 strains were Lactobacillus casei and one strain was Lactobacillus helveticus . The isolation and characterization of the strains would allow a specific starter culture to be produced, which would further allow manufacture of laban zeer at a pilot plant scale to produce clean and hygienic product.
