Abstract |
This work was done to give some information on the chemical composition of some medicinal plants such as milk thistle seed ( MTS) and chicory seed (CS) and how utilize them in preparing biscuit . Also , studying the effect of ( MTS and CS ) on hepatic diseases, cholesterol and also the biological and histopathological effects were studied in experimental rats having hepatic injury and fibrosis induced by CCl4.The results revealed that (MTS) contained23.56% protein, 23.12% fat, 30.33% crude fiber and 4.98% ash . Chicory seed had 21.53%protein, 12% fat, 33.91% crude fiber and10.19 % ash content, all values were calculated on dry weight basis. Also, the seed had antioxidant properties due to its content of phenolics, flavonoids. Scavenging radical activity indicated that 80% aqueous ethanolic extract of MTS had 88.57 % inhibition activity at 100ppm of DPPH. While 80% aqueous ethanolic extract of CS had 88.29% inhibition activity. Panelists' scores detected that the nearest organoleptic properties of biscuit to the control were in biscuit containing 5 and 10% of MTS or CS. All rats poisoned by CCl4 and fed on basal diets contained 10% MTS and CS as well as prepared biscuit contained 10 % MTS and CS showed decrease in total cholesterol, triglycerides, AST and ALT for all groups when compared to positive control group.
The present work supported the consumption and industrial application of milk thistle seed and chicory seed which compete favorable in nutritional composition. Therefore there is need to their therapeutic and nutritional purposes .
