Abstract The present study was carried out to investigate the utilization of agricultural waste as low cost such as rice, soy , broad bean hulls and wheat bran and sugar can bagass to isolate secondary products (antioxidant, pectin and cellulosic fiber gel ) to be used industrial . The chemical composition and fiber contents were detrmined in native seed coats Moreoverm antioxidant was extracted from the seed coats and the results showed that the broan hull extract had the highest content in antioxidant activity and oxidative stability at level of 250 ppm followed by soy hull . The residual after extracted antioxidant was used to isolate the pectin and physico – chemical characteristics of isolated pectin were determined and compared with commercial pectin . The results showed that the pectin isolated from soy and broad bean bean hull were nearly for pectin commercial. These results indicate that this pectin have a good solubility and high gelatinization . After that the residual after antioxidant extrioxidant extraction and pectin isolation was converted to cellulosic fiber gel and its chemical composition was determined . From the results, it could be noriced that the crude fiber, total dietary fiber , insoluble dietary fiber and cellulose were increased in cellulosic fiber gel compared with native seed coats . Moreover, diets thets contain large amounts of dietary tend to be bulky and have low energy density. From these results, it could be concluded that the agricultural waste can be used to produce secondary products. These secondary product can be used in increased the shelf of oil, jelling ham and could to bakery product for beneficial health.
