English : Natural antioxidants and their potential application in functional dairy foods
Abstract Functional antioxidants have been emerged as a new sector of health-enhancing products. The human diet contains an array of different compounds that posses antioxidants activities or have been suggested to scavenge reactive oxygen species (ROS) based on their structural properties. An imbalance between ROS and antioxidants defense systems may lead to chemical modifications of biologically relevant macromolecules like DNA, proteins or lipids that the are possible path-biochemical mechanisms in the initiation or development of several diseases states. Thus, diet rich in dietary antioxidants scavenge ROS and exhibit several health effects including anti-cancer effects, lowering blood cholesterol, reducing risk of cardiovascular diseases, antihypertension, improvement of renal function and diabetes. The present review highlights on free radical, source and function of antioxidants and their potential application in dairy products.
