English : Influence of crossing white holland and broad breasted bronze turkeys on meat and serum characteristics

Abstract Data of the breast and thigh meat physical ( i.e.pH, color,tenderness and water holding capacity ) and chemical ( moisture, protein, ether extract and ash ) characteristics were obtained from both sexes on a total of 40 F1 staight- bred (20) and cross- bred (20) turkeys at 24 wk. Of age. Data regarding serum constituents (cholesterol, CHL; Tri- Glycerides,Gly; Total protein, pro; Albumin, Alb; Globulin, Glob; Glotamic Oxaloacetic, SGOT and Glotamic pyruvic Transaminases,sGPT) were taken on another 120 individuals ( 40 at each considered age ) produced from two commercial turkey breeds ( Broad Breasted Bronze, BBB and White Holland, WH ) as well as their reciprocal crosses ( i.e. four mating groups) . The study aimed at the evaluation of the direct and separate cross heterotic effect of aforementioned progeny traits ( meat physical and chemical characteristics traits at 24 wk of age as well as serum constituents at 16, 20 and 24 wk of age ), the genetic evaluation ( straight- bred differences, direct additive and maternal additive ) besides the estimation of the non- genetic factors affecting these traits was carried out . Tests of significance revealed that mating group ( MG ) affect significantly all breast physical traits and protein and ether-extract from breast chemical traits. Considering thigh physical and chemical traits, however MG succeeded to prove significance on PH from bhysical and protein and ether extract from chemical traits. Sex and MGx sex interaction failed to prove significance on most of the meat physical and chemical traits investigated. When considering serum constituents traits, MG affect most traits significantly at all ages investigated, except sGPT and sGOT at any of the studied ages in addition to albumin and globulin concentrations at 20 wk of age.
