English : Production of low calories functional ice permeate
Arabic : انتاج مثلوج وظيقى من راشح اللبن منخفض الطاقة.
Abstract To overcome the problem of environmental pollution of milk permeate, it was used to produce a new type of fruit ices like ice loly that help the consumer to replace the mineral lost specially in hot season. Such products are thirst quenching product rich in antioxidants, low in caloric content, acceptable in taste and cheap in price. Thus cantaloupe, lemon, apricot and kumquat juices were prepared and mixed with milk permeate. Sucrose was used as control sweetener while natreen and kandisin were used as calories free sweeteners. The mixes properties and the resultant ices were examined. The total energy of the mixes were reduced to 25-30% by using the calorie free sweetener. All ices were tested organoleptically and were acceptable in flavor and texture without defects. Thus it can be recommend the use of natreen and kandisin to produce low energy highly antioxidant ice permeate (ice loly) and to add value for milk permeate.
