English : Some Nutritional Problems Resulting From the Consumption of Soybean Products in Some African Environments

Abstract The present study was planned to utilization of soybean hull and extraction of galactomannan, that composed of linear of β-1,4-linked mannose with α-1,6-linked galactose units and studied some nutritional problems. The obtained results could be summarized in the following points: 1- The galactomannan under investigation was contained D-galactose unit to D- mannose unit ratio 2:3. Analysis of monosaccharide constituents by (TLC). 2- Regarding interaction between haemoglobin and galactomannan, it was found that galactomannan alter the absorption of haemoglobin (in rang of 385-410 nm), in which the absorption decreases as the concentration of galactomannan increase. 3- Data showed that the galactomannan act as anti-precipitating agent against precipitation of casein. It was a positive correlation between turbidity obtained and concentration of galactomannan in casein mixture, i.e. the turbidity was increased with the increasing of galactomannan concentration in protein solution. 4- Pre-incubation of digestive enzymes (i.e. pancreatic amylase, trypsin and lipase) and enzyme substrate (i.e. starch, BABA and olive oil) with deferent concentrations of galactomannan led to significant inhibition of enzyme activity. The inhibitory activities of galactomannan were increased with increasing of galactomannan concentrations. In other words, it was positive correlation between GM. and inhibitory activity. 5- The galactomannan at concentration of 200 mg inhibited the starch digestion (using inverted sac technique) in the mucosal side and inhibited glucose absorption into the serosal side. 6- The galactomannan have haemagglutinating activity for rat and cow erythrocytes. The haemagglutinating activity is proportioned with the concentration of galactomannan, i.e. positive correlation between them. 7- The galactomannan possess anti-tumor activity against EACC. Anti-tumor activity of galactomannan was proportioned with the concentration of galactomannan. Thus, it was positive correlation between anti-tumor activity and galactomannan concentration.
