Abstract |
This research is an attempt to produce different types of dried acidophilus milk which contain high survived L. acidophilus and aimed to produce acidophilus milk with honey to avoid the unacceptable flavour for the Egyptian consumers. The effect of feeding acidophilus milk on serum cholesterol, triglycerides, total lipids, and higli (HDL) & low (LDL) density lipoprotein of hypercholesterolemic rates was also studied.
The freeze drying powder products have higher counts of L. acidophilus as compared with the spray drying powder products The acidophilus milk powder products contaIning Banana paste and tomato juice without sugar showed higher cells count of L acidophilus as compared with the other acidophilus milk powder.
Acidophlius milk supplemented with different portions of honey (8,10 and 12%) for the production offcidophilus milk was found to be more effective for improying the organoleptic properties of the resultant product when fresh and throughout storage period.
Feeding acidophilus milk using two doses (lml and 2ml /100g Bwt.) to hypercholesterolemic rats causd a reduction of cholesterol level, triglycerid , total lipids and LDL , while the HDL was increased as compared with contr6i rats at zero time.
