Abstract |
Diastase activity, hydroxymethylfurfral content and pH value were evaluated in fresh and 2-year stored bee honey samples colleted from the beekeepers after extraction. In addition, the antimicrobial activity of stored honey was also tested against 13 pathogens. Data obtained could be summarized as follow:
• The collected bee honey samples were divided in two groups according to the diastase activity in the fresh honey.
• The mean diastase activity, HMF content in the pH values in the high quality honey were 24.38 DN, 7.37 mg/kg and 4.50 in the fresh samples; 6.53 DN , 14.22 mg/kg and 3.98 in stored honey sample , respectively . Diastase activity was decreased by 73.22 % meanwhile HMF content and the acidity was increased by 160.79 and 11.65 % in stored honey, respectively.
• Concerning the low quality honey the picture was different as the diastase activity , HMF content and pH values recorded 4.84 DN, 9.31 mg/kg and 4.49 in the fresh samples, and 3.74 DN, 26.11 mg/kg and 3.72 in the stored samples for the three parameters, respectively. After storage diastase activity decreased by 22.37 % while HMP and the acidity increased by 180.45 and 17.15%, respectively.
• The antimicrobial test of stored honey showed wide range of antimicrobial action against the tested pathogen species, indicating that these characteristic of honey is a multi-factor dependant one.
