Abstract This study aimed at determining the knowledge need level of respondent rural women regarding the recommended practices to get clean and safety vegetable products in the fields of field production, handling, storing and environmental protection, determining the contribution degree of some independent variables explaining the total varience in knowledge need degrees of respondent rural women, determining information sources, extension services, constraints facing respondents and their suggestions to overcome these constraints, and identifying who can do some tasks in the area of producing healthy and safe vegetable crops. This research was carried out in three villages selected from Beheira, Sharkia and Giza governorates. Data were collected by personal interviews from a systematic random sample amounted to 220 respondents. Simple correlation coefficient, Step-Wise, mean used to analyze data statistically, in addition to frequencies and percentages. The results of this study revealed that: • The knowledge need level of respondents in the research area was moderate regarding field production, handling, storage and environmental protection with percentages 68%, 64.3%, 64.3%, 66.3% respectively. • Ten independent variables explained the total varience for the total knowledge degree of respondents. These variables were: leadership degree, degree of attitude towards change, degree of attitude towards extension, years experience regarding vegetable cultivation, annual income from vegetable crops, number of cultivated vegetable crops, total acreage of vegetable crops, age, educational degree of respondent, and degree of family influence. • The important information sources were personal interviews, husbands, friends, female extension workers and vegetable traders. • The important extension services were holding meetings to inform rural women with the harmful effects of pesticides, the safety use of pesticides, the recommended harvesting and packing techniques, and environmental protection. • The main constraints facing rural women were the waste use of chemical fertilizers and pesticides, pollution of irrigation water, using drainage water in irrigation. The main suggestions of respondents to overcome these constraints were contracting with vegetable producers who follow the healthy and safety practices, raising the prices of these products, raising the awareness of rural women with the safety use of pesticides, and increasing the dependence on organic fertilizers. • Rural women role was absent in the area of field production. Whereas, the husbands role was absent in the area of handling. Rural women implemented some unsuitable tasks in the area of storage and environmental protection. These tasks were storing vegetable products with pesticides and fertilizers, washing clothes and dishes in canals nearing to vegetable fields, and getting rid of bad vegetables and empty cans of pesticides in the canals and drains. • The research came out with four recommendations to raise the awareness of rural women with the recommended practices to produce clean and safe vegetable food.
