Abstract |
Fifteen freshly processed broiler chicken parts were collected from different commercial plants in Giza Governorate All samples except the control group were subjected to different irradiation doses of gamma radiations 300 krad (3kGy), 500 krad(5KGy) and 800 krad (8KGy) then refrigerated Permeable packaging 5 KGy was sufficient to eliminate 5 log 10 CFU/g But in Vacuum packed chicken parts salmonella sp and Escherichia coli were eliminated at 3 KGy of gamma radiations, the increasing doses above 3 KGy causes increase in the amounts of decrease muscle elasticity of chicken parts .
