Abstract samples of Raw chicken parts were colected from different Giza and Ciro restants to evaluate the effect of nisin on Aerobic plate count APC and staphylococcus auteus count (SAC) ON THE SAMPLES than freezed for 10 days control samples showed no significant difference on APC and SAC count after 10 days freezibg Nisin concentation showed decreasse in the mean values of APC count by 0.98 , 1.88, 2.07 and 3.65 log (10) CFU/g Nisin concentration showed reduction in the mean values of SAC count by 34, 0.39 , 0.6 and 0.93 log (10) CFU /g respectively
