English : Low cholesterol rayeb milk
Arabic : لبن رايب منخفض الكوليسترول
Abstract Five treatments were carried out for producing Rayeb milk. The controlueatment was manufactured by using milk of 3% fat. The other treatments the milk fat was replaced by sunflower oil at different levels 25%, 50%, 75% and 100%. The samples of all treatment.., were stored for two weeks at refrigerator. Chemical, microbiological and organoleptic properties were analyzed after 1,3,6,9,12 and 15 days. The best treatment was that of 25% replacement. It was characterized by low cholesterol content and good quality .
