BABY FOOD PUREES OF KHALAL AND RUTAB DATE AS FORTIFIED WITH SKIM MILK, PEANUT, SESAME AND ORANGE JUICE

Abstract |
Palm date (Phoenix dactylifera), Hayani cultivar was used to process palm date purees as baby food for children between 1-3 years old. Purees were supplemented or fortified with 10% each of skim milk, peanut and sesame powder, or with 10% of fresh orange juice (water, citric acid and sugar were also added). For comparison purees were manufactured of date at ripening stages namely, Khalal and Rutab. Supplemented products affected evidently the chemical composition and increased the nutritional value compared to all date puree (control). For example, the consumption of only 100g of Khalal and Rutab skim milk and peanut powder purees will cover 102, 91% and 100, 81% of Recommended Dietary Allowances (RDA) for 1 years old child percent satisfaction value (PS-values), PS-values for 2-3 old child will be 83,74% and 81, 71% respectively. Purees were also important sources for fiber and energy. Carbohydrates or protein were the major source of calories, while fat was not a major source for energy in any of studied purees due to low fat contents (0.6-6.23%). Actually, while control or skim milk purees were low fat or nearly low fat products (about 3% fat), orange-juice puree had classified as fat free purees (0.5% or less of fat). Rutab purees had more reducing and less non-reducing sugars. Rutab puree had higher K, Ca, P, Fe and Mg levels than that of Khalal, and all purees prove to be good sources of studied minerals.
Date purees, in particular the supplemented ones were rich sources of Vitamin C (specially orange juice puree), good source of vitamin B1 (specially sesame and peanut purees), while were not good sources of vitamin A. Skim milk, peanut and sesame date purees were good sources for omega-6 omega-3 fatty acid (FA), indicating high nutritional value. Organoleptic evaluation revealed that supplemented Khalal and Rutab purees rated similar; being better than that of all date puree. This indicated the possibility of processing either of them that commercial scale or at home.
