English : The extension requirements of rural women to have hygienic and safety milk and dairy products.

Abstract The study aimed at identifying the application level of rural women to every recommendation regarding hygienic and safety of milk and dairy products, determining women's performance degree to these recommendations, and the most important variables affecting the level of their performance to these recommendations. Data were collected by personal interviews using a pre-test questionnaire from a systematic random sample mounted 254 represented 10% of farmer's wives in 3 villeges at Qalyoulie, Monofyia and Fayoum during September and October 2004. To analyze data statistically respondent chi square, standard deviation were used in addition to frequencies and percentages. The study showed the following results: 1- 64.75% of rural wives perform some recommendations regarding hygienic and safety milk and dairy products with high level, 26.77% perform it, with intermediate level, and 7.48% perform it with low level. 2- The performance level of the rural wives for mine recommendations was high, the percentage of its performance exceeds (80%) from the maximum level of performance, and their performance level was intermediate in the remaining 4 recommendations (50-80%). There were significant relationship atO.01 level between the rural wives performance's level of the recommendations regarding to have hygienic and safety milk and dairy products and each variables as follows : The number of the educational years for the rural wives, family holding of dairy cattle, the amount of milk produced from one animal per week by Kg., as well as there was a significant relationship atO.05 level with: rural wave's age, and their degree on the industrialization of the dairy production.
