Antibacterial activity and therapeutic usefulness of bee honey against Escherichia coli O157:H7 and Salmonella typhimurium infection

Abstract |
Twenty-five isolates of Escherichia coli O157:H7 (18.5%) as well as 49 isolates of Salmonella typhimurium (36.2%) were isolated from 135 samples of children and calves (30 stool samples from children, 105 samples from fecal swabs and organs of calves). The most isolated E.coli O157:H7 and S. typhimurium were highly resistant to most antibiotic disc used.
The effect of storage period and heat on physical and chemical properties of honey samples was studied. Water content was decreased in storing and heat-treated honey samples. Color measured in optical density was markedly affected by storage for long period. Electrical conductivity (EL value) was not affected by storage or heating. The Refractive Index was reduced by storage. The storage period had no effect on the pH value of different honey samples. Hydroxymethyl furfural (HMF) is produced and increased in concentration by long period of storage. The enzyme activity was decreased by long period of storage.
In vitro, the antibacterial effect of honey was predominant on E.coli O157:H7 than S. typhimurium. Water content, pH value, HMF and presence of H₂O₂ play an important role on the potency of clover honey as antibacterial agents.
In vivo, mice was used as a model for studying the parenteral usefulness of honey as antibacterial against both pathogens. The effect of storage time and concentration of honey was considered. The success of honey as parenteral antibacterial agent for control of bacterial infection is discussed.
