English : PREPARATION AND EVALUATION OF INSTANT NOODLES SUPPLEMENTED WITH RED BEET

Abstract Red beetroot is a popular vegetable in the Mediterranean countries Red beet powder (RBP) is a good source of protein (13.88%), crude fiber (22%), minerals (Ca, Fe and Zn) and folic acid which are vital for human nutrition and maintains a good health. (RBP) could be applied as nutrient supplement of wheat flour in preparation of noodles to improve its color and nutritional value and also to provide decorated food (red-colored noodles) to the consumer. Noodles were supplemented with (RBP) at 5%, 10% and 15% levels. Noodles were well accepted until supplementation level with 10% RBP to wheat flour.
