Abstract |
Date fruit has served as a staple food in the Arab world for centuries. Date fruit can provide many essential nutrients and potential health benefits to the consumer. The main chemical components of date fruit include carbohydrates, dietary fiber, protein and minerals, vitamins, phenolic acids and carotenoids. Dates are a main income source and staple. Green date Palme should be freshly picked from the tree. At kimri stage fruit that is bruised, damaged, or that are prematurely fallen to the ground should not be used. Then we can be useful by processing] preservation by pickled with lactic fermentation in common salt (NaCl, 2–10%) solution. Date Palm were pickled by lactic fermentation through bringing in salt brine solution (Nacl), with different concentrations (2–10%), and incubated for 40 days. The final product with 8% and 10% brine solutions determined at pH values (4.5- 3.0), lactic acid (LA), (0.09-1.20 g/ kg -1) and sugars on fresh weight basis. Sensory evaluation -pickle acceptable based on texture, taste, aroma, and flavor and after taste. Principal component analyses reduced the original analytical and proximate variables (pH, LA, total sugar, ash, fat, and protein) to green date palm was characterized for different attributes. The date pickles was selected for the storage study for a period of 40 day. The proximate composition, and organoleptic evaluation were carried-out.
