Abstract
Leafy vegetable crops, parsley, rocket and leek are the most important cultivated in Egypt. The chemical analyses were determined in these plants. The results showed that the vegetables were rich in protein, dietary fiber, polyphenols ad flavonoids. The protein and total dietary fiber amounted 25.36 and 26.41% in parsley, 25.90 and 23.83% in rocket and 23.40 and 27.62% in leek, respectively. whereas, the both of polyphenols and flavonids contents were relatively high from ethanol extract and its fratioated using High Performance Liquid Chromatography (HPLC). The results idected that parley had high content of apigenin and rocket contained high amounts of ferulic acid , salicylic acid ad o-cumaric acid, meanwhile, leek Had High amount of resrocenol, rutin, myricetin, quercetin and kaemplero compounds. Also, the antioxidant activity increased with increasing the concentration of natural antioxidant extracted from 200 to 300 ppm in cotton seed oil during heating period.
The effects of leafy vegetables in total lipids, triglycerides, total cholesterols and cholesterol fractions ( LDL and HDL ) were attained in hypercholesterolemia rats given 10% dried leafy vegetables has in cholesterolemic rats given 5% compared with cholesterolemic controls. Rats of cholestrolemic control lost their body weight at higher rate compared with rats led on dried vegetables at 5 and 10% diets.
Conclusively, the dried leafy vegetable highly amounted of protein, dietary fiber fractions and other valuable antioxidants constituents. These constituents it cold ma be scavenging the free radicals from cotton seed oil during heating period and hypercholesterolemia in rats
