English : Effect of harvest time of maraqi cultivar on olive oil quality and sterols composition

Abstract Harvesting times have an effect on olive oil quality, stability, fatty acid composition and sterols composition. The effect of harvest time of Maraqi cultivar on sterols composition and olive oil quality was investigated. Quality characteristics (acidity, peroxide value, K232, K270, ?K, oxidative stability index, total phenols, fatty-acid composition, % unsaponifiable matter and % sterols) were studied in Maraqi virgin-olive oil samples harvested at different time (from the first of November and periodically after each 2 weeks until the middle of December) during season (2009 – 2010). The majority of the analytical parameters, i.e. U.V absorption at 270 nm, total phenols, oxidative stability, total sterols, ?-sitosterol, Unsaponifiable matter (%) decreased during subsequent harvest time, whereas, free acidity, peroxide value, K232, linoleic, ?-5-avenasterol and oil content increased.
