English : Drying of Honeybee Brood

Abstract Brood of honeybees, (pupae) was periodically collected at 15 day intervals from the bee hives. Fresh samples of honeybee were dried in laboratory dryer at three different temperatures 70, 80, and 90 ?C and time intervals from 15 to 180 min. The results indicated that drying took place in the falling rate period at all temperatures studied. Moisture transfer from honeybee brood described by applying the Fick's diffusion model, and the effective diffusivity was calculated. Effective diffusivity increased with increasing temperature. An Arrhenius relation with an activation energy value of 68.1665 kJ/mol expressed the effect of temperature on the diffusivity. The chemical components of dried honeybee brood were determined and compared with the familiar protein sources. The results indicated that dried honeybee brood is rich in protein 51.9%, fat 18.5%, carbohydrate 16.8%, fiber 3.5%, and ash 4%. Several minerals were detected in brood of honeybees, i.e., K, Na, Fe, Cu, Zn and Mn, in considerable amounts. Vitamins A, E and C were also detected.
